Recipes for Robert Welch

At the end of last year, I created some exciting, healthy recipes for Robert Welch and their #EATWELL campaign for January. Over the next few weeks, I will share them here too. You can also get a free copy of the recipe booklet if you head over to their website, click here for more info.

The first recipe I'm going to share is a brilliant prepare-ahead breakfast that can be grabbed as you run out of the door. Soaking the oats overnight makes them easier to digest and keeps you fuller for longer. Chia seeds are really nutrient dense and an amazing source of protein as well as adding a nice creamy texture. You can use whatever fruit you have, my favourite is a combination of berries, citrus and apple or pear.

 

Ingredients

-       150g oats (GF)

-       1 tbsp chia seeds

-       1 orange, segmented

-       100g blueberries

-       350ml almond milk

-       1 tsp of maple syrup

-       Pinch of salt

-       1 tsp of vanilla extract

-       ½ tsp cinnamon

-       Sprinkling of sunflower or pumpkin seeds

-       1 apple, chopped

 

Method

Place all of the ingredients except the apple into a medium sized Tupperware box or bowl and mix.  Cover and leave in the fridge overnight.  In the morning, add the chopped apple and loosen with a little extra milk if needed. This is delicious as it is but also amazing warmed through in the microwave.
